Easy Cheesy Tortilla Dip

(From Our June 2023 Newsletter - Grandma C.)

Ingredients

1. 1 small bunch green onions, sliced fine


2. 3 firm Roma tomatoes, chopped, seeds eliminated


3. 4 tbsp fresh cilantro leaves, chopped


4. 1 small can diced jalapenos, drained


5. 16 oz Colby Jack Cheese, shredded or 2 8oz pkgs of the thick shreds

Dressing

1. 1 package Good Seasons Zesty Italian Dressing Mix


2. ½ cup Olive Oil


3. ¼ cup vinegar


4. 3 tbsp water

Chill the shredded cheese in the freezer for about 10 minutes.

Make the dressing according to the package instructions.

Place all ingredients into a large mixing bowl and pour the dressing over it.

Stir well with a spatula but do not overmix or it will cause the cheese to get mushy.

Let it set for about 4 hours in the refrigerator to blend the flavors.

Serve with Tortilla chips, Fritos , or as a wonderful topping for Tacos and Tostadas.
