Cajun Style Chicken & Kielbasa Stir Fry

  • 1 cup cooked chicken breast, cubed

  • 1 pkg. turkey kielbasa, sliced

  • 2 TBSP olive oil

  • 1 medium yellow onion, chopped in large pieces

  • Bell pepper, 1 of each color, Red, Green and Yellow

  • 1 small pkg. snow peas

  • 1 zucchini, sliced

  • 1 TBSP Cajun seasoning (or add to taste, some like it spicier than others!)

  • Jasmine Rice

  • Salt and Pepper
Cook Jasmine Rice according to package directions, based on number of people you are serving.  Hint: Typically, 2 cups of dry rice will make about 4 servings.

Brown chicken, kielbasa and chopped onion in the olive oil in a skillet or wok over medium heat.  Cook until edges are golden.  Do not drain.

Add bell pepper, snow peas and zucchini.  Sprinkle with Cajun seasoning, salt and pepper.  Toss with wooden spoons to blend.

Stir Fry 5 — 6 minutes or until vegetables are softened, but not mushy.  Again, this is a taste preference, some people like their vegetables on the crunchy side!

Serve over cooked Jasmine Rice.
