Easy Skillet Mac & Cheese

(From Our February 2014 Newsletter - Grandma C.)

  • 3 tbsp Butter or Margarine

  • 1/4 cup finely sliced green onions

  • 1/2 cup bell pepper (any color variety)

  • 1 tbsp parsley, chopped

  • 1 cup rotini pasta

  • 1 cup water (extra water if needed up to 1/4 cup)

  • 1/2 cup shredded cheddar cheese

  • 1/2 cup shredded mozzerella cheese

  • 1/4 cup milk or light cream

  • Salt and pepper to taste
Melt the butter in a skillet.  Add onion, pepper, water and macaroni, bring to a boil.
Cover and cook for 10-12 minutes or until macaroni is tender.
Stir in the cheeses, milk or cream and add salt and pepper to taste.  Stir in the parsley last, just prior to serving.
For added taste, you can add diced ham or bacon to this dish or, for a mexican twist, add a can of Rotel diced tomatoes.
This entire dish can be done in less than 30 minutes, which makes it a great meal for something quick during the work week!
