Low – Carb Pumpkin Fluff Dessert

Ingredients
  1. 1 – 12 oz can Pumpkin

  2. 1 tbsp pumpkin pie spice

  3. 2 tsps Truvia or sugar alternative of your choice

  4. 1 box (small) sugar-free Jello pudding mix (cheesecake flavor)

  5. 1 tub (regular size) sugar–free cool whip
Place first four ingredients in large mixing bowl and stir to mix.

Add the Cool Whip in thirds, each time stirring lightly to mix.

Be careful not to overmix or mix vigorously as this will cause the cool whip to break down and get soupy!

Spoon mixture into parfait cups and lightly sprinkle with extra pumpkin pie spice.

Cool in refrigerator for at least 1 hour before serving.
